So, I’ve made banana muffins, banana bread and now it is time for banana cookies! My desire for this wonderful ingredient is yet to subside. And after tasting the delight of the normal oatmeal and raisin cookies I made a couple of weeks ago I thought it would be interesting to mix the two ideas and so ended up with Oatmeal Banana Walnut and Raisin Cookies!
The cookies turned out beautifully soft with just a mild hint of a banana flavour (I might add more next time around) and the walnuts added a wonderful little crunch. I think you could also use this recipe to make a sort of flapjack tray bake, but I’ll get back to you on that one when I try it.

Recipe
115g unsalted butter
220g light brown sugar
1 egg
110g ripe banana, mashed
1 tsp vanilla extract
125g plain flour
1/2 tsp baking powder
pinch of salt
245g rolled oats
40g walnuts, chopped
40g raisins
