A couple of months ago my lovely dad came to stay for the weekend. Whilst I happily whipped up cake and biscuits for him in the kitchen, he was kind enough on one evening to cook up a mouth-watering paella for us.
Now, ever since that evening, I have been slightly obsessed and have been determined to master the art of making one myself. And I think I have now, after what must be a dozen attempts, mostly achieved that goal.
I am reluctant to post a recipe here as nothing I do when cooking this dish is an exact science but more based on the original memory of watching my dad and then by intuition. The ingredients though are – an onion, chorizo, chicken, garlic, paella rice, stock, peas and smoked bacon.
So instead of posting a recipe I thought I would just give you a glimpse of the magic…
It might not be the worlds most sophisticated paella but it’s mine and it’s delicious!
